A simple, 30-minute dessert or teatime snack packed with supportive health benefits for Spring, our Yoga and Wellness Retreat guests have absolutely loved these beauties as a welcome snack this season.

Method

- Thoroughly wash your hands.
- Line a baking sheet or serving tray with parchment paper and set aside.
- Add shredded coconut and spices together, mixing thoroughly.
- Add in maple syrup, coconut oil, vanilla, and salt.
- Roll up your sleeves and mix with your hands until the batter becomes sticky and everything is well incorporated.
- If the batter isn’t holding strongly together, consider adding more coconut oil or a splash of water until it does.
- Back tightly into an ice cream scooper, and plop onto your prepared sheet.
- To prepare the chocolate drizzle, add all your ingredients into a stainless-steel bowl set over a pot of water with 1-2 inches of water in it (you are setting up a double boiler). Your bowl bottle should not touch the surface of the water in the pot. Bring the water to a boil, stirring the contents of your bowl until melted. Add more coconut oil if it doesn’t seem thin enough to drizzle.
- When ready, drizzle your macaroons with chocolate. Alternatively, you can dip the bottoms into chocolate or both!
- Put in fridge to cool until the chocolate has hardened.
- Enjoy!
Store in an airtight container in the fridge. They are best served at room temperature, so we suggest pulling them out 30 minutes prior to serving.Recipe adapted from Minimalist Baker.
